I made this delicious, Spiced Acorn Squash Stew tonight for dinner.

Acorn Squash Stew with Couscous

I followed this recipe with a few exceptions: I used acorn squash instead of butternut squash, fresh instead of canned tomatoes and veggie broth instead of chicken broth. It turned out delicious – and makes a filling, hearty meal with the couscous. Go ahead, try it – its time to do something with that squash you have sitting on the counter. What other recipes do you like to make with fall/winter squash?
