Tonight I tested out a vegan pumpkin bread recipe from All Recipes: http://allrecipes.com/recipe/super-moist-pumpkin-bread-2/Detail.aspx. What I loved about this recipe is that it doesn’t have eggs or any weird egg substitutes and it has an interesting ingredient: coconut milk. I made a few changes to the recipe by crushing the walnuts and substituting half of the oil with applesauce and cooking it all in a giant 13″x9″ glass pan (I didn’t have any loaf pans). It was simple to make and tastes delicious! I’m thinking of adding fresh cranberries or maybe chocolate chips to my next batch. I think this will work perfectly to give as holiday gifts. Now, I just need to buy some loaf pans!
